Default Spraying solvent based (poly urethane) and water based

I thought I read somewhere that once you spray a solvent based paint/clear coat that you can't spray water based acrylics anymore with the same brush/gun. Is that true?

No, as long as you clean the tool completely.

NOT TRUE MAX, I've sprayed both in the same day. like Doug said make sure you clean your equiptment. If you clean with thinner make sure you clean again with a dish soap or alike to get the oils out. Water based paints don't adhere well with petrolium.

air brushs use different types of O-rings, some is for water-bases paint only
