For doing textiles the Paasche VL is a great way to go. The kit is a better deal than buying one size and then adding the other sizes separately.
As far as which size needle and nozzle goes, much depends on the type of paint and detail you plan on for your work. The smaller needle and nozzle let you achieve smaller detail with greater ease, but they don't do the wide coverage as easily as the larger needle and nozzles do, they are also more forgiving on thicker paint or paint with chunks and blobs of material in them.
Ideally, you should reduce, mix, and strain ALL your paint to the right viscosity BEFORE it goes into your airbrush. This removes alot of the typical problems especially with heavier textile paints and beginners.
Keep in mind that each brand and type of paint will be different, and that within many brands and types of paint, you will find a wide variety of viscosities/thicknesses of paint, from color to color and from batch to batch.

Without knowing what your issues are with the lettering on plates is, it's difficult to give you suggestions to help you resolve your problem.

Thorough prep work and the right kind of paint are probably the bulk of your problems from the basic end of things, however, without knowing your skill level, it's hard to tell what other issues you may be having.

How about posting some photos of what you are trying to do, and adding some more info on what your problems or challenges are? Don't worry, we can get you through this.
